I have a new favorite foodie blog: http://annies-eats.com. Annie posts some delightful fare with great stories and fantastic pictures. We’ve tried several of her recipes, and we have yet to find one that we disliked. This one, Salmon Burgers with Cilantro Mayo, was just excellent.
I served these with my Crispy Roasted Potatoes, and they went together beautifully for a wonderful Friday evening. We tried using green bell peppers instead of red because I had a ton of green peppers, and that was a mistake. Pretty colors, but the green bell peppers have a much stronger flavor, which overshadowed the salmon and obliterated the cilantro mayo. In the future, we will stick to the recipe for the burgers. Next time, though, we will be experimenting with different flavors of mayonnaise – this one is delicious, but I don’t think it lived up to its potential when paired with the salmon. I’m thinking horseradish mayo for our next run.
Check out her recipe – it’s well worth your time! Salmon is pretty forgiving in this recipe – even when it’s a little overcooked, it doesn’t get too dry.
