On a recent vacation to the UP, I discovered day drinking. It’s lovely! The Hippie Husband mixed up a pitcher of margaritas and just kept refilling everyone’s glasses.
A discussion ensued of the merits of fresh ingredients vs. store-bought margarita mix. We all agreed that the fresh pitcher was far superior, but our friend Marina noted that sometimes, only one person wants a drink after work. Juicing the limes and mixing the ingredients seems like an awful lot of work for a single drink. And making a whole pitcher for an average Thursday seems an awful lot like alcoholism.
Drunken brilliance flashed into my mind, and a few weeks later, I juiced the limes, simmered the syrup, and made a batch of margarita mix. I then poured it into ice cube trays, froze them, and calculated the proportions for perfect select-a-size margaritas.
Our favorite (weak-ass) margarita recipe is equal parts tequila, triple sec, fresh lime juice, and simple syrup. You can leave out the simple syrup if you are a grown-up, but I highly recommend the sweeter version. Especially if you are upgrading from a store-bought mix, which is mostly sugar anyway.
The proportions are simple. It’s just a matter of measuring how many ounces or shots are in your ice cube trays. We have two different sizes, so I would recommend doing a quick check and then writing the amount of tequila and triple sec needed to create the right ratio.
The ice cube tray that I used holds 1.5 ounces per cube. That’s equivalent to about 1 shot. That meant that I used two margarita cubes, 1 shot of tequila, and 1 shot of triple sec to make a small margarita. Pour them all into a shaker and mix, pretending that you are making a much more sophisticated drink. Once the ice cubes are melted, you should have an ice-cold margarita to pour into a salt-rimmed glass.
- Simple syrup
- Fresh lime juice
- Mix equal parts simple syrup and lime juice (1 cup of each will be enough to fill most standard ice cube trays. But that is a *lot* of limes to juice)
- Pour into ice cube tray and freeze.
- Store in an airtight bag or container.
- Mix two cubes with 1 ice cube’s worth tequila and another ice cube’s worth triple sec.
- Shake vigorously until the cubes are melted. Or – hear me out – throw it all into a blender for a frozen margarita.
