This is such a terrific side dish. It was especially good alongside chicken and apple sausage.

Eggplant is in season! Packed with fiber, vitamins, minerals, and antioxidants, eggplants provide more than pretty color in your dishes. These purple beauties called to us at the Farmer’s Market this past weekend. At 50 cents a pop, it was easy to indulge. Since my only experience cooking with eggplant in the past has been a few disastrous tries at eggplant parmigiana, we decided to make eggplant our vegetable of the month for September.
The first preparation we tried was simple grilling for sandwiches. I love this season – so many of my favorite vegetables are coming off the vine at the same time. This sandwich pairs grilled eggplant and zucchini with fresh tomatoes. Throw in some marinated mozzarella, and you’ve got a wonderful end-of-summer dinner that comes together in a snap without heating up your kitchen.
We skipped 3 months of Veggie of the Month, but we’re back on track now. Since our local Farmer’s Market is in full swing, choosing a seasonal VOTM was much easier – if it’s for sale, it’s seasonal. June’s VOTM was Swiss Chard. Continue reading

Little Hippie picked out “Rah! Rah! Radishes” from a display in the Library. We had a lot of fun reading the book and checking out the photographs. LH expressed an interest in trying some of the vegetables we didn’t see very often at our house. I asked whether she would want to choose a new veggie each month to learn about and cook with, and she agreed. We flipped through the pages until we found some winter root vegetables and chose parsnips as our first veggie of the month. Continue reading
